I wondered why no comments were appearing this morning. Had I been abandoned by my readers? Was it something I said? Were you seeing someone else?
It turns out, I forgot to open comments after the weekend break. Oops. Sorry about that.
Anyway, here’s the question: What should be the “Official State Food of Illinois”?

Bacon, Sausage, Chops, Ribs — all forms of Pork.
But to prepare it properly — i.e., Illinois-style — you must do your best to have someone else pay for it. And failing that, convince voters that it will pay for itself sometime down the road.
I’m gonna have a brat for lunch — and I’ll pay for it by leasing my children’s future income.

Pork tenderloin sandwiches. Breaded, thin and crispy on a toasted bun with mayo, lettuce and pickle.
I rarely eat them, but they are oh-so-Illinois, in a good way.
I was going to say pizza, but pizza south of I-80 is absolutely horrific and you said Illinois.

Toss up between good ole southern Illinois BBQ from 17th Street in Murphysboro or Pizza with a deeper dish than the blago defeicit…though i dont think thats possible. While we are on it Rich perhaps instead of crappy chain restaurants in the basement of the Thompson Center we could have a smattering of Illinois cusine…show those Chicagoans a little downstate culture

Field Corn of course! We eat more forms of it than anyone can imagine. Read the book, Omnivore’s Dilemma, and you will discover that we are practically corn people. We subsidize it, we pile it on the ground, ADM says we can drive forever on it, and it virtually runs the politics in Springfield. What a deal! I think it might even be worthy of a moment of silent prayer to open each school day. Corn is god in IL.

Grilled Reinvented Tenderloin burger. (GRT burger for short). It’s free to consumers. Just walk into any food joint in Illinois and order a couple. The restaurant owners will pay for it for you. It will also be served for school lunches 4 days per week. It’s for the kids you know. Everyone benefits and it’s free!

There is pizza south of I 80, it’s just thin crust. Try Cafe Milo or Timpone’s in CU. But really a transfat-laden “skillet” in any small town restaurant should be the state symbol — and it provides a handy cast-iron weapon when you’re through carbo loading.
